The above quantities are generous. Do not be tempted to roll sugar paste too thin or too thick.

Quick hints and tips

  • A 3-4mm thickness is the best guide. Use sieved icing sugar over your hands and work surface to prevent sticking Ensure the butter icing/cream or ganache is smooth and even before applying the cake covering.
  • Rolling pin guides are also helpful to ensure a consistent thickness. Keep quarter turning the sugar paste after each roll this helps keep the sugar paste achieve an even roll and shape plus stops unwanted sticking to work surfaces. Roll in one direction only.
  • Make sure that you have rolled the sugar paste enough to cover the top and sides of your cake; use the rolling pin to guide you on the size.
  • Lift the sugar paste by placing the rolling pin in the centre of the rolled paste and then flipping up each of the sides of the paste; use some icing sugar to prevent any sticking if necessary.
  • Lift the paste placing the rolling pin over the centre of the cake once happy with the position flap down the sides of the paste allowing the paste to cover cake loosely.
  • Using a plastic cake smoother helps to give a smooth and consistent finish; using hands and fingers can causing indentations. Start smoothing from the top of the cake working down to the sides. Use a sharp knife to trim around the edges.
