Tips for using the edible gems on cakes

Tips for using the edible gems:

After covering your cake with either butter icing or sugar paste/fondant wait until it is completely dry before attaching the jelly gems.

Make a small hole where the gem is to be attached and again leave this until completely dry as the gems do not like moisture as it can make them cloudy.

Lightly coat the hole with confectioners glaze (not water based edible glue) then pop the gem in. It is best to use tweezers to lift the gems to avoid them becoming dull from contact with your hands.
